SALAD: Green Bean, Mushroom, Pepper and Olive Salad
1 lb. Green Beans, trimmed
1 lb. White Mushrooms, washed, trimmed and sliced
4 whole Roasted Red Peppers, cut into thin strips
4 Green Onions, thinly sliced
10 Greek or Italian Black Olives, pitted
2 tsp. Grapes & Olives On Tap Garlic Mushroom Olive Oil
2 Tbsp. Grapes & Olives On Tap Pecan Praline Balsamic Vinegar
2 tsp. Dijon Mustard
Salt and Black Pepper
Steam green beans over hot water for about 7 minutes, until tender but still firm. Place mushrooms, red peppers, green onions and olives in large bowl. Whisk together Garlic Mushroom Olive Oil, Pecan Praline Balsamic Vinegar and Dijon mustard. Season to taste with salt and pepper. When green beans are done, cut them in half and add to mushrooms, red peppers, green onions and olives. Add dressing and mix well.
