APPETIZER: Bruschetta
1 Baguette, sliced
8 Roma Tomatoes, diced
3 cloves of Garlic, minced
3 Tbsp. fresh Basil leaves, chopped
2 Tbsp. Grapes & Olives On Tap Basil Olive Oil (plus more for brushing)
2 Tbsp. Grapes & Olives On Tap Garlic Mushroom Olive Oil
1 Lemon
Pinch of Red Pepper flakes (optional)
Salt and Black Pepper
¼ cup Parmesan Cheese, grated
Preheat oven to 400°F. Place baguette slices on a baking sheet and brush the bread lightly with Basil Olive Oil. Toast until light brown. Combine in a large bowl the tomatoes, garlic, basil leaves, Basil Olive Oil, Garlic Mushroom Olive Oil, the zest from ½ of the lemon and the juice from the whole lemon, red pepper flakes (if desired), and ¼ tsp. each of salt and pepper. Mix gently to combine. Add more salt and pepper to taste. Spoon tomato mixture over toasted bread. Top with Parmesan Cheese. Serve immediately.
